Chisel Jersey, Calville Blanc, Porters Perfection, Golden Russert, Yarlington Mill, and Tremlettes Bitter apples, all grown on our farm. Hand-pressed, fermented naturally in low temps and then bottled with remaining residual sugar. The bottled cider is aged on its side for almost a year, then riddled and disgorged (i.e. removed the yeast).
This is a complex cider: perfect tannins, very clean, bright, and endlessly crushable. No residual or added sugars makes it exquisitely dry.
