2021 ‘Harmful Melodies’ Plum Wine

The wine consists of 75% certified organic Shiro and Red Heart Plums from Cawston,
BC. Grown with unbelievable care by the family of Twisted Hills Craft Cider in Cawston.
The plums were direct pressed right into neutral oak, where the juice went through a
natural primary fermentation. The wine was aged alone under head space for three
months before I added a 25% blend of Viognier, grown in Osoyoos. Before bottling, a
batch of botrytis affected Riesling was added to the blend to round everything out.
Bottled unfined and unfiltered after 10 months in barrel.
